  • 1 cup Red Enchilada Sauce or green enchilada sauce for a twist
  • 1 pound Ground Beef or ground turkey/pork
  • 1 cup Oats or breadcrumbs for lower carbs
  • 2 large Eggs essential for binding
  • 1 teaspoon Salt to taste
  • 1 teaspoon Onion Powder or fresh onions
  • 1 teaspoon Garlic Powder or fresh garlic
  • 1 teaspoon Pepper adjust to spice preference
  • 1 teaspoon Oregano or dried oregano
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder adjust per spice tolerance
  • 1 tablespoon Hot Sauce optional
  • 2 cups Cheese cheddar, Monterey Jack, or pepper jack
  • 1/4 cup Cilantro optional for garnish
For Serving
  • 1 cup Cheesy Spanish Rice
  • 8 tortillas Tortillas
  • 1 cup Chips for dipping with salsa

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9 x 13-inch baking dish.
  2. In a large bowl, combine 1/4 cup enchilada sauce, ground beef, oats, eggs, salt, onion and garlic powders, pepper, oregano, cumin, chili powder, and optional hot sauce. Mix thoroughly.
  3. Shape the mixture into meatballs about 1 to 1.5 inches in diameter and place them in the baking dish.
  4. Pour remaining enchilada sauce over the meatballs and cover with aluminum foil.
  5. Bake for 30 minutes, then remove foil.
  6. Sprinkle cheese over the meatballs and bake for an additional 10 minutes until the cheese is melted and bubbly.
  7. Let cool for a few minutes, garnish with cilantro if desired, and serve warm.
