- Preheat your oven to 350°F (175°C) and grease a 9 x 13-inch baking dish.
- In a large bowl, combine 1/4 cup enchilada sauce, ground beef, oats, eggs, salt, onion and garlic powders, pepper, oregano, cumin, chili powder, and optional hot sauce. Mix thoroughly.
- Shape the mixture into meatballs about 1 to 1.5 inches in diameter and place them in the baking dish.
- Pour remaining enchilada sauce over the meatballs and cover with aluminum foil.
- Bake for 30 minutes, then remove foil.
- Sprinkle cheese over the meatballs and bake for an additional 10 minutes until the cheese is melted and bubbly.
- Let cool for a few minutes, garnish with cilantro if desired, and serve warm.
