  • 1 teaspoon Vanilla Extract
For the Cream Cheese Frosting
  • 8 oz Cream Cheese Full-fat brick-style.
  • 1/2 cup Unsalted Butter Softened to room temperature.
  • 4 cups Confectioners’ Sugar Sifted.
  • 1 pinch Salt Adjust to taste.

  • 1 oz Dark Chocolate For drizzling or shavings.
  • 1/2 cup Pecans Chopped.

Method
 

Preparing the Cake
  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round springform pans with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  3. In another bowl, mix brown sugar, oil, buttermilk, applesauce, molasses, eggs, and vanilla until smooth.
  4. Gradually add the dry mixture to the wet mixture, folding gently.
  5. Divide the batter between the prepared pans and bake for 22-26 minutes.
  6. Allow cakes to cool in the pans for 5 minutes before transferring to wire racks.
Making the Frosting
  1. Beat cream cheese and butter until creamy. Gradually add sugar, vanilla, and salt, mixing until fluffy.
Assembling the Cake
  1. Frost the top of one cooled cake layer, place the second layer on top, and frost the entire cake.
  2. Add optional toppings as desired.
