  • 1 tbsp Onion Powder fresh onion can alter texture
  • to taste Salt & Pepper adjust based on preferences
For the Eyeball Topping
  • 6 Black or Green Olives or cherry tomatoes for variation
  • 4 oz Cream Cheese or sliced mozzarella; vegan cream cheese as substitute
For Serving
  • 1/4 cup Sugar-Free Ketchup or tomato paste for 'bloody' effect

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground meat, egg, grated Parmesan cheese, almond flour, garlic powder, onion powder, salt, and pepper. Mix until just combined.
  3. Form the mixture into 12 even meatballs and place them on the lined baking sheet.
  4. Bake the meatballs for 18-20 minutes until golden brown and cooked through (internal temperature at 165°F/74°C).
  5. Remove from the oven and gently press the tops of each meatball to create a flat surface.
  6. Top each meatball with cream cheese or mozzarella and place half an olive in the center.
  7. Drizzle sugar-free ketchup or tomato paste around the base of the meatballs for a spooky effect.
