  • 1 box Strawberry Cake Mix Betty Crocker works wonderfully.
  • 1 cup Fresh Strawberries Chopped; frozen (thawed) can be substituted.
  • 1/4 cup Lemon Juice Freshly squeezed is optimal.
  • 3 large Large Eggs
For the Glaze
  • 1 cup Powdered Sugar Confectioner’s sweetener is a good sugar-free option.
  • 2 tablespoons Additional Lemon Juice

Method
 

Steps
  1. Preheat your oven to 350°F (175°C).
  2. Line an 8-inch square baking dish with parchment paper and spray with cooking spray.
  3. In a large mixing bowl, combine strawberry cake mix, chopped fresh strawberries, lemon juice, and large eggs. Mix until smooth.
  4. Pour the batter into the prepared dish and bake for 18-20 minutes, checking for doneness with a toothpick.
  5. Let the brownies cool in the pan for 10 minutes, then move to a cooling rack.
  6. For the glaze, mix powdered sugar with additional lemon juice until smooth.
  7. Pour the glaze over the cooled brownies and let it set before cutting into squares.
