Preparation

  2. Combine all-purpose flour, baking powder, baking soda, salt, and poppy seeds in a bowl.
  3. Cream together unsalted butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well, then stir in vanilla extract.
  5. Mix in yogurt, lemon juice, and lemon zest until smooth.
  6. Fold the dry mixture into the wet mixture gently.
  7. Pour batter into the prepared pan and tap lightly to remove air bubbles.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack.
  10. If desired, whisk together powdered sugar and lemon juice for a glaze.
