  • 1 cup white sugar Brown sugar can be used
  • 2 teaspoons baking powder Ensure it’s fresh
  • 0.5 teaspoon salt
  • 0.5 cup oil (canola, avocado, or vegetable) Melted coconut oil is a substitute
  • 1 large egg
  • 0.5 cup milk Any kind of milk works
  • 0.5 cup ube halaya Store-bought or homemade
  • 1 teaspoon ube extract Vanilla extract can substitute
For the Optional Crumb Topping
  • 0.25 cup flour
  • 0.25 cup sugar Adjust to taste
  • 2 tablespoons butter Melted butter works best
  • 0.5 cup coconut flakes Chopped nuts can substitute

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line an 8-cup muffin pan with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the sugar and egg until light and fluffy. Add milk, oil, and ube extract, mixing until combined.
  4. Fold the dry ingredients into the wet mixture until just combined.
  5. Spoon about ¼ cup of batter into each muffin cup and add 1 tablespoon of ube halaya in the center before topping with more batter.
  6. For the optional topping, mix flour, sugar, and melted butter until crumbly and sprinkle on top of the muffins.
  7. Bake for 20-25 minutes until golden brown. Check with a toothpick for doneness.
  8. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack.
