- Preheat your oven to 375°F (190°C) and line an 8-cup muffin pan with paper liners.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the sugar and egg until light and fluffy. Add milk, oil, and ube extract, mixing until combined.
- Fold the dry ingredients into the wet mixture until just combined.
- Spoon about ¼ cup of batter into each muffin cup and add 1 tablespoon of ube halaya in the center before topping with more batter.
- For the optional topping, mix flour, sugar, and melted butter until crumbly and sprinkle on top of the muffins.
- Bake for 20-25 minutes until golden brown. Check with a toothpick for doneness.
