Ingredients
  

For the Meatloaf
  • 1 lb Ground Beef 80/20
  • 1 cup Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 large Egg
  • ¼ cup Fresh Parsley, chopped or dried parsley
  • ¼ cup Parmesan Cheese, grated or nutritional yeast for dairy-free
  • ¼ cup Ketchup sugar-free for keto
  • 1 tbsp Mustard
  • 1 tbsp Italian Seasoning or individual dried herbs
  • 1 tsp Smoked Paprika or regular paprika
  • to taste Salt
  • to taste Black Pepper
For Optional BBQ Glaze
  • ¼ cup Ketchup sugar-free options available
  • 1 tbsp Apple Cider Vinegar or lemon juice
  • 1 tbsp Brown Sugar or sugar-free alternative
  • 1 tbsp Worcestershire Sauce or soy sauce as substitute

Method
 

Preparation
  1. Preheat your air fryer to 400°F (200°C).
  2. In a large mixing bowl, combine ground beef, onion, garlic, egg, parsley, Parmesan, ketchup, mustard, Italian seasoning, smoked paprika, salt, and pepper. Mix gently until combined.
  3. Prepare a 9x5 inch loaf pan lined with plastic wrap. Transfer the meat mixture into the pan and shape into a loaf.
  4. Carefully lift the meatloaf out of the pan using the plastic wrap and place it in the air fryer basket.
  5. Set the air fryer to 400°F (200°C) and cook for 20 minutes, checking for an internal temperature of 160°F (70°C).
  6. While the meatloaf cooks, mix the BBQ glaze ingredients in a small bowl.
  7. After 20 minutes, remove the meatloaf and brush with BBQ glaze. Cook for an additional 5 minutes.
  8. Let the meatloaf rest for about 10 minutes before slicing.
