Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and grease a large baking dish.
  2. In a large mixing bowl, combine bell peppers, red onion, cherry tomatoes, garlic, and kale. Drizzle with oil and sprinkle taco seasoning, then toss to coat.
  3. Fold in chickpeas and shredded chicken, add mayonnaise or Greek yogurt, and season with salt and pepper. Mix thoroughly.
  4. Layer half of the mixture in the baking dish, sprinkle half of the cheese, repeat with remaining mixture and cheese.
  5. Cover with foil and bake for about 30 minutes. Remove foil and bake for an additional 3–5 minutes until cheese is golden.
  6. Let the casserole rest for 5 minutes before serving. Garnish with herbs or lime if desired.
