  • 0.25 cup Fresh Basil chopped
  • 2 tablespoons Lemon Juice freshly squeezed
  • 1 teaspoon Lemon Zest
For Crunch
  • 0.5 cup Breadcrumbs optional, gluten-free if needed

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Wash and dry the zucchinis, then slice them lengthwise and scoop out the flesh.
  3. Drizzle the zucchini halves with olive oil and season with salt and pepper.
  4. In a medium skillet, heat olive oil and sauté red onion and garlic for 3-4 minutes.
  5. Add the chopped zucchini flesh to the skillet and cook for an additional 2-3 minutes.
  6. Stir in cherry tomatoes, olives, dried oregano, and optional cumin, then cook for 5 more minutes.
  7. Remove from heat and mix in feta cheese, parsley, basil, lemon juice, and zest.
  8. Fill the zucchini halves with the mixture and sprinkle with breadcrumbs if using.
  9. Bake for 25-30 minutes until tender and golden brown.
  10. Remove from oven, cool for a few minutes, and serve warm.
