- In a large mixing bowl, combine 2 cups of diced ripe tomatoes, 1 cup of diced cucumber, and ½ of a thinly sliced red onion. Add ¾ cup of pitted and halved Kalamata olives. Mix gently.
- Carefully fold in 1 cup of crumbled or cubed feta cheese into your salad mixture.
- In a separate small bowl, whisk together ⅓ cup of extra virgin olive oil, 3 tablespoons of red wine vinegar, 1 teaspoon of dried oregano, and a pinch of salt and pepper.
- Drizzle the freshly prepared dressing over your salad mixture and gently toss everything together.
- Serve immediately, garnished with freshly chopped parsley or mint.
