  • 1 tbsp Fresh Parsley chopped

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9x13-inch baking dish with olive oil.
  3. In a large mixing bowl, combine the cubed chicken breast, sliced zucchini, halved cherry tomatoes, chopped red onion, and minced garlic.
  4. Pour in the olive oil and sprinkle in the oregano, basil, smoked paprika, salt, pepper, and optional red pepper flakes. Mix thoroughly.
  5. Spread the seasoned mixture evenly in your prepared baking dish.
  6. Generously sprinkle the shredded mozzarella and grated Parmesan cheese over the top.
  7. Cover the baking dish with aluminum foil and bake for 20 minutes.
  8. After 20 minutes, remove the foil and bake for an additional 10-15 minutes until the cheese is golden and bubbly.
  9. Garnish with fresh parsley before serving.
