  • 1 cup cherry tomatoes Halved before adding to tacos.

  • 1/2 cup feta cheese Crumbled; goat cheese can be a good alternative.
  • 1 cup spinach Or arugula, or any leafy greens of choice.

  1. In a mixing bowl, whisk together 2 tablespoons of olive oil, juice from one lemon, minced garlic, oregano, salt, and pepper until well combined. Add thinly sliced chicken breasts, ensuring they are evenly coated in the marinade.
