Method
 

Step-by-Step Instructions
  1. Pat the chicken breast dry and season with salt, black pepper, and half of the oregano. Heat olive oil over medium-high heat in a skillet.
  2. Sear the chicken for 5-6 minutes until golden brown on one side, then flip and cook for another 3-4 minutes until done. Remove and let rest.
  3. In the same skillet, add more olive oil and sauté minced garlic for 30 seconds until fragrant.
  4. Add diced red bell pepper and yellow squash, cooking for 4-5 minutes until softened.
  5. Stir in halved cherry tomatoes, cooking for 2 minutes until they blister.
  6. Return the chicken to the skillet and combine with vegetables, heating through for 1-2 minutes.
  7. Add fresh spinach, remaining oregano, and red pepper flakes. Cook for 2-3 minutes until spinach wilts.
  8. Zest a lemon over the skillet, adjust seasoning if needed, and serve immediately.
