Ingredients

  • 2 medium avocados ripe, for creamy texture
  • 1 juiced lime substitute with lemon if needed

  • 0.5 cup corn kernels fresh or thawed frozen
  • 1 medium red bell pepper diced
  • 1 medium poblano pepper chopped, substitute with jalapeño for more heat
  • 0.25 cup red onion chopped
  • 1 medium jalapeño pepper minced, omit for milder flavor
  • 0.25 cup cilantro chopped, substitute with parsley if desired
  • 1 clove garlic minced, fresh is best
For the Tacos
  • 1 can black beans drained
  • 1 tsp ground cumin for warmth and earthiness
  • 4 tortillas flour, corn, or low-carb options
  • 2 cups lettuce shredded
  • to taste hot sauce optional, for spice
  • 1 lime wedges for serving
  • 1 lemon wedges for serving

Method
 

Prepare Guacamole
  1. Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl. Mash until creamy yet chunky. Add lime juice and salt, then stir in corn, bell pepper, poblano, red onion, jalapeño, cilantro, and garlic. Adjust seasoning.
Heat Black Beans
  1. Combine black beans with remaining corn, chopped bell pepper, diced poblano, and ground cumin in a medium saucepan. Heat over medium-low for 5-7 minutes, stirring until blended and warmed through.
Warm Tortillas
  1. Wrap tortillas in a damp paper towel and microwave on high for 20-30 seconds until pliable.
Assemble Tacos
  1. Place shredded lettuce on one half of each tortilla. Spoon black bean mixture over the lettuce, then top with guacamole, hot sauce, and cilantro.
Serve with Fresh Wedges
  1. Serve tacos with lime and lemon wedges on the side for added flavor.
