Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Peel and chop the russet potatoes, cook in salted boiling water for 12–15 minutes, then drain.
  3. Combine all meatloaf ingredients in a large bowl and mix gently until combined.
  4. Press the meatloaf mixture into the prepared baking dish and bake for 20 minutes.
  5. Mash the drained potatoes with butter, sour cream, milk, salt, and pepper until creamy.
  6. Spread the mashed potatoes over the meatloaf, sprinkling half the cheddar cheese on top.
  7. Return to oven and bake for another 20-25 minutes. Add remaining cheese and crumbled bacon, bake for 5 more minutes.
  8. Allow to rest for 10 minutes, garnish with green onions and parsley, drizzle with barbecue sauce if desired.
