Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C) and lightly spray a 9x13-inch baking dish with non-stick spray.
  2. In a large bowl, combine cubed chicken and chopped potatoes.
  3. In a separate bowl, whisk together olive oil, melted butter, smoked paprika, garlic powder, crushed red chili flakes, cumin, salt, and pepper. Pour over chicken and potatoes.
  4. Transfer the mixture to the prepared baking dish, spreading evenly.
  5. Bake for 45-55 minutes, stirring every 10-15 minutes, until chicken is cooked and potatoes are tender.
  6. Remove from oven and sprinkle half the shredded cheese over the top, followed by bacon and green onions, then the remaining cheese.
  7. Return to the oven and bake for an additional 5-10 minutes until cheese is melted and bubbling.
