  • 1 cup Rice brown or white
  • 1 cup Fresh Herbs parsley or cilantro
  • 2 cloves Garlic minced
  • 1 medium Onion chopped
  • 2 tablespoons Lemon Juice freshly squeezed
For the Peppers
  • 4 large Bell Peppers any color, tops sliced off and seeded

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Cook lentils and rice according to package instructions.
  3. Sauté onion and garlic in olive oil until translucent and fragrant.
  4. Mix cooked lentils and rice with sautéed onion and garlic, herbs and lemon juice.
  5. Prepare bell peppers by slicing tops off and cleaning out seeds.
  6. Stuff each bell pepper with the lentil and rice mixture.
  7. Bake for 25-30 minutes, covered with aluminum foil.
  8. Remove from oven, let cool slightly, and serve.
