Preparation Steps
- Preheat your oven to 375°F (190°C).
- Brown the ground beef in a skillet over medium heat for 5-7 minutes.
- Add taco seasoning and cook for an additional 2-3 minutes.
- Incorporate diced green chiles and cook for another 2 minutes.
- Fill each almond flour tortilla with the beef mixture and roll them tightly.
- Whisk together sour cream and red enchilada sauce in a bowl until smooth.
- Pour sauce over the rolled tortillas in the baking dish.
- Sprinkle shredded cheese on top of the enchiladas.
- Cover baking dish with aluminum foil and bake for 15 minutes.
- Remove foil and bake for an additional 5 minutes until cheese is bubbly.
- Allow to cool for a few minutes before serving.
