Ingredients
  

Filling
  • 1 lb Ground Beef lean
  • 2 tbsp Taco Seasoning use homemade if desired
  • 1 can Diced Green Chiles
Sauce
  • 1 cup Red Enchilada Sauce choose low-sugar varieties
  • ½ cup Sour Cream or Greek yogurt
Wrap
  • 6 pieces Almond Flour Tortillas
Topping
  • 1 cup Mexican Blend Cheese or any low-carb cheese

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground beef in a skillet over medium heat for 5-7 minutes.
  3. Add taco seasoning and cook for an additional 2-3 minutes.
  4. Incorporate diced green chiles and cook for another 2 minutes.
  5. Fill each almond flour tortilla with the beef mixture and roll them tightly.
  6. Whisk together sour cream and red enchilada sauce in a bowl until smooth.
  7. Pour sauce over the rolled tortillas in the baking dish.
  8. Sprinkle shredded cheese on top of the enchiladas.
  9. Cover baking dish with aluminum foil and bake for 15 minutes.
  10. Remove foil and bake for an additional 5 minutes until cheese is bubbly.
  11. Allow to cool for a few minutes before serving.
