Preparation Steps
  1. Combine the fresh lemon juice, olive oil, honey, salt, and pepper in a medium-sized measuring cup. Whisk until the honey is fully dissolved.
  2. Rinse the kale thoroughly under cold water, strip leaves from the stems, and chop into bite-sized pieces. Dry the kale using a salad spinner.
  3. Place the kale in a large mixing bowl, add the craisins, and drizzle half of the dressing over. Massage the kale for 2-3 minutes until it softens and wilts slightly.
  4. Cover the bowl with plastic wrap and refrigerate for at least 4 hours or overnight to enhance flavor.
  5. Before serving, add the red onion, apple, pear, and toasted pecans to the kale. Drizzle the remaining dressing over and toss gently until combined.
