- Heat a large cast iron skillet over medium heat. Add 1 tablespoon of olive oil and 2 tablespoons of ghee; let it melt until bubbling.
- Introduce the cubed Yukon Gold potatoes to the skillet, tossing them to coat. Sprinkle in minced garlic, dried thyme, oregano, sea salt, and black pepper. Cook for about 8-10 minutes until golden brown and fork-tender. Set aside.
- Increase heat to medium-high and add the remaining 2 tablespoons of ghee. Once melted, add cubed sirloin steak, lightly seasoning with salt and pepper. Sear for at least 2 minutes, then stir and cook for an additional 1-2 minutes.
- Return the crispy potatoes to the skillet and stir gently to combine. Taste and adjust seasoning if needed. Top with freshly chopped parsley before serving.
