Step-by-Step Instructions
  1. Heat a large cast iron skillet over medium heat. Add 1 tablespoon of olive oil and 2 tablespoons of ghee; let it melt until bubbling.
  2. Introduce the cubed Yukon Gold potatoes to the skillet, tossing them to coat. Sprinkle in minced garlic, dried thyme, oregano, sea salt, and black pepper. Cook for about 8-10 minutes until golden brown and fork-tender. Set aside.
  3. Increase heat to medium-high and add the remaining 2 tablespoons of ghee. Once melted, add cubed sirloin steak, lightly seasoning with salt and pepper. Sear for at least 2 minutes, then stir and cook for an additional 1-2 minutes.
  4. Return the crispy potatoes to the skillet and stir gently to combine. Taste and adjust seasoning if needed. Top with freshly chopped parsley before serving.
