  • 1 tbsp Brown Sugar Can substitute with honey or maple syrup.

Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground pork, jerk seasoning, minced garlic, chopped scallions, and freshly grated ginger. Mix until well incorporated.
  2. Shape the meatball mixture into evenly sized balls, about 1 inch in diameter, and place on a plate.
  3. Heat a skillet over medium heat with oil. Add meatballs in a single layer and cook for 4-5 minutes until browned on all sides.
  4. Remove meatballs and pour coconut milk and curry powder into the skillet. Stir to combine and let simmer for 2-3 minutes.
  5. Return the meatballs to the skillet, cover, and simmer on low heat for 10-12 minutes until cooked through.
  6. Serve meatballs over jasmine rice or alongside sautéed vegetables.
