  • 1 box Chocolate Cake Mix Dense mix for 'magic' layer
  • 3 large Eggs Can substitute with egg whites
  • 1/2 cup Vegetable Oil Can replace with melted coconut oil or butter
  • 1 cup Water Check cake mix instructions for exact amount
For the Ricotta Layer
  • 15 oz Ricotta Cheese Use whole milk ricotta at room temperature
  • 4 large Eggs
  • 1 cup Sugar Adjust to taste
  • 2 teaspoons Vanilla Extract
For the Frosting
  • 1 box Instant Pudding Mix Use dark chocolate pudding for more flavor
  • 1 cup Milk To mix with pudding
  • 1 container Whipped Topping Lightens the frosting

Method
 

Baking Instructions
  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking pan and line with parchment paper.
  2. Combine the chocolate cake mix, water, 3 eggs, and vegetable oil in a large bowl. Beat on medium speed for about 2 minutes until smooth.
  3. In a separate bowl, blend the ricotta cheese, 4 eggs, sugar, and vanilla extract until smooth, about 2-3 minutes.
  4. Pour the chocolate batter into the greased pan, then carefully spoon the ricotta mixture over it without mixing.
  5. Bake for 60-70 minutes until center is set but jiggles slightly; the top should be golden-brown.
  6. Cool in the pan for at least 2 hours, then refrigerate for at least 4 hours or overnight.
  7. Whisk together the pudding mix and milk until thick, then fold in the whipped topping.
  8. Once cake is cooled, frost the top with the pudding mixture evenly.
  9. Chill the frosted cake briefly to set before serving.
  10. Slice into generous squares and enjoy.
