Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream softened unsalted butter and granulated sugar together for 3-5 minutes until light and fluffy.
  3. Add eggs and almond or vanilla extract, mixing on medium speed until combined, about 1-2 minutes.
  4. Gradually add in almond flour and all-purpose flour, mixing gently until a cohesive dough forms.
  5. Shape small balls of dough about one inch in diameter and place them on the prepared baking sheet.
  6. Bake for 10-12 minutes until lightly golden around the edges.
  7. Cool for 5 minutes and then sift powdered sugar over the cookies before serving.
