Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Prepare your baking sheet or loaf pan by lightly greasing it.
  2. Finely chop the carrots, celery, and onion. Set aside the chopped veggies in a bowl.
  3. In a mixing bowl, combine the chopped veggies, oats, ground meat, egg, and seasoning. Mix until well combined.
  4. Transfer the meat mixture onto the prepared baking sheet or into a loaf pan and shape into a loaf.
  5. In a bowl, whisk together the ketchup, maple syrup, Sriracha, and tomato paste. Reserve some for glazing.
  6. Pour about one-third of the sauce over the meatloaf and bake for 30 minutes.
  7. After 10 minutes, brush another layer of the sauce over the top and repeat every 10 minutes until done.
  8. Check the internal temperature; it should be 160°F (71°C). Let rest for 10 minutes before serving.
