- Preheat your oven to 400°F (200°C). Prepare your baking sheet or loaf pan by lightly greasing it.
- Finely chop the carrots, celery, and onion. Set aside the chopped veggies in a bowl.
- In a mixing bowl, combine the chopped veggies, oats, ground meat, egg, and seasoning. Mix until well combined.
- Transfer the meat mixture onto the prepared baking sheet or into a loaf pan and shape into a loaf.
- In a bowl, whisk together the ketchup, maple syrup, Sriracha, and tomato paste. Reserve some for glazing.
- Pour about one-third of the sauce over the meatloaf and bake for 30 minutes.
- After 10 minutes, brush another layer of the sauce over the top and repeat every 10 minutes until done.
- Check the internal temperature; it should be 160°F (71°C). Let rest for 10 minutes before serving.
