Method
 

Instructions
  1. Tenderize Chicken: Pound each chicken breast between plastic wrap to ½-inch thickness.
  2. Marinate: Combine buttermilk and hot sauce; season chicken, immerse, and refrigerate for 30 mins to 4 hrs.
  3. Prepare Breading: Mix flour, cornstarch, paprika, garlic powder, onion powder, cayenne; coat chicken after marination.
  4. Heat Oil: Fill skillet with oil to ½ inch deep; heat to 350°F-365°F.
  5. Fry Chicken: Cook chicken in batches for about 4 minutes on each side until golden brown; drain on rack or paper towels.
  6. Make Gravy: Use drippings, whisk in flour for roux; add milk and stir until thickened; season with salt and pepper.
  7. Serve: Pour gravy over chicken or serve on side; garnish with parsley if desired.
