- Preheat your oven to 350º F (175º C).
- Melt 2 tablespoons of butter in a medium skillet over medium-low heat. Add 4 cups of sliced yellow squash and 1 medium chopped onion. Sauté for 5-7 minutes until tender.
- In a large mixing bowl, whisk 2 large eggs. Add 1 cup of grated cheddar cheese and 1 cup of milk. Mix until smooth.
- Stir the sautéed squash and onions into the egg mixture.
- Melt the remaining 2 tablespoons of butter in the skillet. Pour this melted butter into the mixture with ¼ teaspoon of cayenne pepper, ½ teaspoon of kosher salt, and ½ teaspoon of ground black pepper. Mix well.
- Spray a 9x13-inch casserole dish with cooking spray. Pour the squash mixture into the dish evenly.
- Sprinkle 1 sleeve of crushed Ritz crackers over the top.
- Bake in the preheated oven for about 45 minutes until golden brown and set.
- Let the casserole rest for 3 minutes before serving.
