Step-by-Step Instructions
  1. Preheat your oven to 350º F (175º C).
  2. Melt 2 tablespoons of butter in a medium skillet over medium-low heat. Add 4 cups of sliced yellow squash and 1 medium chopped onion. Sauté for 5-7 minutes until tender.
  3. In a large mixing bowl, whisk 2 large eggs. Add 1 cup of grated cheddar cheese and 1 cup of milk. Mix until smooth.
  4. Stir the sautéed squash and onions into the egg mixture.
