Step-by-Step Instructions

  2. Crack one large egg into each tortilla-lined cavity of the cupcake pan, avoiding breaking the yolk.

  4. Gently whisk each egg filling in the muffin pan, mixing it with the seasonings without overmixing.
  5. Distribute cottage cheese, shredded parmesan, and cheddar cheese into each tortilla cup. Add chopped jalapeños if desired.
