- Begin by boiling a large pot of salted water. Cook the lasagna noodles until tender but still al dente, about 8–10 minutes. Drain and lay flat on a towel to cool.
- In a large skillet, heat olive oil over medium heat. Add diced zucchini, bell pepper, and spinach, cooking until tender for about 5–7 minutes.
- In a mixing bowl, combine cooked vegetables with ricotta cheese, seasoning with salt and black pepper. Mix well to create the filling.
- Spread the veggie-ricotta filling evenly across each noodle. Roll tightly and place seam-side down in a greased baking dish.
