Method
 

Preparation Steps
  1. Begin by boiling a large pot of salted water. Cook the lasagna noodles until tender but still al dente, about 8–10 minutes. Drain and lay flat on a towel to cool.
  2. In a large skillet, heat olive oil over medium heat. Add diced zucchini, bell pepper, and spinach, cooking until tender for about 5–7 minutes.
  3. In a mixing bowl, combine cooked vegetables with ricotta cheese, seasoning with salt and black pepper. Mix well to create the filling.
  4. Spread the veggie-ricotta filling evenly across each noodle. Roll tightly and place seam-side down in a greased baking dish.
  5. Preheat your oven to 375°F (190°C). Spread marinara sauce in the bottom, arrange the rolled noodles, cover with remaining sauce, and sprinkle with mozzarella. Cover with foil and bake for 25 minutes.
  6. Remove foil and bake for an additional 10 minutes until bubbly and golden. Let the roll ups rest for about 5 minutes before slicing.
