  1. In a large mixing bowl, combine ground chicken, chipotle peppers, adobo sauce, smoked paprika, ground cumin, garlic powder, onion powder, salt, black pepper, lime juice, breadcrumbs, and the egg. Mix until fully incorporated.
  2. Divide the mixture into four equal portions and shape them into patties about ¾ inch thick, making an indentation in the center to prevent puffing.
  3. Heat grill or skillet over medium-high heat. Cook patties for about 5 minutes on each side or until the internal temperature reaches 165°F.
  4. Add a slice of pepper jack cheese on top of each patty during the last minute of cooking, cover, and let melt.
