Ingredients
  

For the Pasta
  • 12 oz Spaghetti The star ingredient, cooked al dente.
  • 1 tbsp Salt For boiling water.
For the Sauce
  • 4 large Eggs Make sure they are at room temperature.
  • 1 cup Half & Half Can be replaced with heavy cream.
  • 1 cup Parmesan Cheese Preferably freshly grated.
For the Crunch
  • 6 oz Bacon Crispy, can substitute with pancetta or guanciale.
  • 1 cup Peas Can be replaced with asparagus or spinach.
For Seasoning
  • 1 tbsp Black Pepper Freshly cracked.
  • 2 tbsp Parsley Chopped, for garnish.

Method
 

Directions
  1. Prepare ingredients: Let the eggs and half & half sit at room temperature for 1 hour. Chop bacon and grate cheese.
  2. Cook bacon: In a frying pan over medium heat, cook bacon until crispy, about 5-7 minutes.
  3. Boil peas: Cook peas in boiling salted water for 1 minute. Set aside.
  4. Cook spaghetti: In the same pot, cook spaghetti according to package instructions until al dente.
  5. Combine sauce ingredients: Whisk eggs and Parmesan in a bowl, adding reserved pasta water gradually.
  6. Create creamy sauce: Pour the egg mixture over hot spaghetti and toss quickly to coat.
  7. Add bacon and peas: Fold in bacon and peas, mixing thoroughly.
  8. Serve and garnish: Plate the carbonara, garnishing with more cheese, pepper, and parsley.
