Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine mixed berries, lemon juice, lemon zest, maple syrup, and cornstarch. Toss until coated.
  3. Roll out the thawed puff pastry on a floured surface to about ¼ inch thick and cut into four rectangles.
  4. Spoon berry mixture into the center of each pastry rectangle, leaving a ½ to 1-inch border around edges.
  5. Fold the edges of each rectangle over the filling to create a border, pinching corners to seal.
  6. Whisk the egg and brush it over the edges of each tart.
  7. Bake for 20-25 minutes until puffed and golden brown.
  8. Let the tarts cool for a few minutes before serving warm, ideally with vanilla ice cream.
