  • 1 teaspoon Dry Oregano For authenticity; Italian seasoning can be used.
  • 1 teaspoon Salt Adjust according to preference.

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Peel the Russet Idaho® Potatoes and cut them into halves or quarters. Place in a baking dish.
  3. In a mixing bowl, whisk together chicken broth, olive oil, lemon juice, garlic, and oregano. Adjust salt as needed.
  4. If using semolina, add it to the liquid mixture and stir well. Pour evenly over the potatoes.
  5. Cover the baking dish tightly with aluminum foil and roast for about 40 minutes.
  6. After 40 minutes, uncover and stir the potatoes. Roast uncovered for an additional 20 to 30 minutes.
  7. Once roasted and golden, cool slightly and garnish with parsley and lemon slices if desired.
