- Preheat your oven to 400°F (200°C).
- Peel the Russet Idaho® Potatoes and cut them into halves or quarters. Place in a baking dish.
- In a mixing bowl, whisk together chicken broth, olive oil, lemon juice, garlic, and oregano. Adjust salt as needed.
- If using semolina, add it to the liquid mixture and stir well. Pour evenly over the potatoes.
- Cover the baking dish tightly with aluminum foil and roast for about 40 minutes.
- After 40 minutes, uncover and stir the potatoes. Roast uncovered for an additional 20 to 30 minutes.
- Once roasted and golden, cool slightly and garnish with parsley and lemon slices if desired.
