- In a medium saucepan, combine sugar, butter, and cream. Stir continuously until it reaches a golden brown color and 240°F.
- Remove the caramel from heat and let it cool slightly. Dip each pear into the caramel, twisting for an even coat.
- Allow excess caramel to drip back into the saucepan before laying the pears on a parchment-lined tray.
