  1. Preheat your oven to 350°F (186°C). In a food processor, combine button mushrooms, half of a white onion, and three cloves of garlic. Blitz until roughly chopped.
  2. In a large mixing bowl, combine the blitzed mushroom mixture with the remaining meatloaf ingredients and mix until fully incorporated.
  3. In a separate bowl, prepare the topping by mixing ketchup, brown sugar, and mustard until well blended.
  4. Line a loaf pan with parchment paper, pack the meatloaf mixture, and spread half of the ketchup topping over the top.
  5. Bake uncovered for 30 minutes, add remaining ketchup topping, and bake for another 30 minutes until done.
  6. Allow the meatloaf to cool for 10 minutes before slicing.
