- Preheat your oven to 350°F (186°C). In a food processor, combine button mushrooms, half of a white onion, and three cloves of garlic. Blitz until roughly chopped.
- In a large mixing bowl, combine the blitzed mushroom mixture with the remaining meatloaf ingredients and mix until fully incorporated.
- In a separate bowl, prepare the topping by mixing ketchup, brown sugar, and mustard until well blended.
- Line a loaf pan with parchment paper, pack the meatloaf mixture, and spread half of the ketchup topping over the top.
- Bake uncovered for 30 minutes, add remaining ketchup topping, and bake for another 30 minutes until done.
- Allow the meatloaf to cool for 10 minutes before slicing.
