Method
 

Step-by-Step Instructions
  1. Slice the ripe avocado in half, carefully remove the pit, and scoop the flesh into a mixing bowl. Mash it with a fork, adding a pinch of salt to enhance its flavor. Aim for a creamy consistency that's easy to spread. Set the bowl aside.
  2. Toast two slices of sourdough bread in a toaster or on a skillet until golden brown and slightly crispy, about 2-3 minutes over medium heat.
  3. Spread a generous layer of mashed avocado over one slice of the toasted bread.
  4. On the second slice, spread a layer of Dijon mustard and drizzle honey, allowing them to blend together.
  5. Layer thinly sliced deli turkey over the honey mustard mixture, overlapping slightly.
  6. Sprinkle salt & vinegar potato chips over the turkey.
  7. Layer sliced heirloom tomatoes on top, followed by microgreens or lettuce.
  8. Place the slice topped with avocado against the other slice and press gently. Slice diagonally and serve.
