- Slice the ripe avocado in half, carefully remove the pit, and scoop the flesh into a mixing bowl. Mash it with a fork, adding a pinch of salt to enhance its flavor. Aim for a creamy consistency that's easy to spread. Set the bowl aside.
- Toast two slices of sourdough bread in a toaster or on a skillet until golden brown and slightly crispy, about 2-3 minutes over medium heat.
- Spread a generous layer of mashed avocado over one slice of the toasted bread.
- On the second slice, spread a layer of Dijon mustard and drizzle honey, allowing them to blend together.
- Layer thinly sliced deli turkey over the honey mustard mixture, overlapping slightly.
- Sprinkle salt & vinegar potato chips over the turkey.
- Layer sliced heirloom tomatoes on top, followed by microgreens or lettuce.
- Place the slice topped with avocado against the other slice and press gently. Slice diagonally and serve.
