  • 1/4 cup honey or maple syrup
  • 2 limes juice
  • 1 teaspoon salt
Mango Salsa
  • 1 cup mango diced
  • 1/2 cup red onion finely chopped
  • 1 pepper jalapeno seeded and minced
  • 1/4 cup cilantro chopped
  • 1 lime juice

Method
 

Chicken Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine honey, lime juice, and salt; marinate the chicken for at least 15 minutes.
  3. Place the chicken on the baking sheet and bake for 10-12 minutes until cooked thoroughly.
Mango Salsa Preparation
  1. In a separate bowl, mix together diced mango, red onion, jalapeno, cilantro, and lime juice.
  2. Let the salsa sit for at least 10 minutes to allow flavors to meld.
Serving
  1. Once the chicken is cooked, allow to cool for 5 minutes before slicing.
  2. Serve the chicken topped with mango salsa on the side.
