For the Meatballs
  • 1 lb Ground Beef or Ground Chicken can substitute with plant-based meat
  • 1/2 cup Breadcrumbs gluten-free breadcrumbs can be used
  • 1 large Egg or a flax egg for vegan option
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced or powdered
  • to taste Black Pepper
  • to taste Salt
For the Sauce
  • 1/2 cup Honey or maple syrup for vegan option
  • 1/4 cup Soy Sauce can use low sodium or tamari
  • 1/4 cup Ketchup
For the Rice Bake
  • 2 tbsp Olive Oil or Butter can substitute with vegetable oil
  • 2 cups Chicken Broth or Vegetable Broth low sodium recommended
  • 1 cup Bell Peppers diced
  • 1 cup Frozen Peas no need to thaw
For Garnishing
  • 1/4 cup Chopped Green Onions optional

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  2. In a large bowl, mix ground meat, breadcrumbs, egg, onion, garlic, soy sauce, black pepper, and salt.
  3. Form the mixture into 1 to 1.5-inch meatballs.
  4. Sear the meatballs in a skillet over medium heat for 2-3 minutes on each side until browned.
  5. In a saucepan, combine honey, soy sauce, ketchup, and a splash of water, then heat until bubbling.
  6. Spread uncooked rice in the baking dish, topping with bell peppers and peas, and drizzle with oil or butter.
  7. Pour broth over the rice and layer the meatballs evenly on top.
  8. Pour the honey garlic sauce over the meatballs and rice.
  9. Cover with foil and bake for 40 minutes.
  10. Remove foil and bake for an additional 10-15 minutes until rice is cooked and top is golden.
  11. Let rest for 5-10 minutes, then garnish with green onions before serving.
