  • 1 pound lean ground beef (93/7)
  • 1 medium onion (yellow or white)
  • 3 cloves garlic minced
  • 1 teaspoon salt to taste

  • 2 cups chopped Yukon Gold potatoes cut into small pieces
  • 4 cups beef broth full-salt for best flavor
  • 1 can condensed tomato soup
  • 1 can petite diced tomatoes do not drain

  • 2 cups frozen mixed vegetables a blend of carrots, peas, corn, and green beans
  • 2 tablespoons Worcestershire sauce
For Seasoning & Garnish
  • 1 tablespoon dried parsley for garnish
  • 1 teaspoon dried basil for garnish

Step-by-Step Instructions for Hamburger Soup
  1. In a large soup pot over medium-high heat, add the ground beef along with diced onion and minced garlic. Cook, stirring occasionally, for about 5-7 minutes or until the beef is browned and no longer pink. Drain any excess grease.
  2. While the beef is browning, peel and chop the Yukon Gold potatoes into small pieces, ideally less than 1/2 inch.
  3. Once the beef is cooked, add the chopped potatoes to the pot along with beef broth, condensed tomato soup, petite diced tomatoes, frozen mixed vegetables, Worcestershire sauce, dried parsley, and basil. Stir well.
  4. Bring the mixture to a rolling boil over medium-high heat, then reduce the heat to medium-low. Cover the pot and let it simmer for at least 30 minutes.
  5. After simmering, remove the lid and carefully taste the soup. Adjust the seasoning if necessary by adding salt or pepper.

Notes
