  • 2 lb Potatoes cut into 1-inch chunks
  • 3 tbsp Oil preferably extra virgin olive oil
For the Seasoning
  • 1 oz Ranch Seasoning Hidden Valley is a popular choice
  • 1/2 tsp Garlic Powder to enhance overall flavor
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
For the Toppings
  • 2/3 cup Cheese shredded sharp cheddar
  • 4 slices Bacon cooked and crumbled
  • 1 tbsp Parsley fresh chopped
  • 2 tbsp Green Onions thinly sliced

Method
 

Preparation Steps
  1. Cut 2 pounds of red potatoes into 1-inch chunks and place in a bowl.
  2. In a separate bowl, mix 3 tablespoons of oil, 1 ounce of ranch seasoning, garlic powder, salt, and pepper.
  3. Toss the potato chunks in the mixture until evenly coated and let them rest for 5 minutes.
  4. Preheat your grill to 400°F (200°C) and ensure grates are clean and oiled.
  5. Transfer seasoned potatoes onto a double layer of aluminum foil, seal tightly.
  6. Place the foil packet on the preheated grill and cook for 10 minutes, then flip and grill another 10 minutes.
  7. Carefully open the foil, add cheese, bacon, and parsley, and reseal before grilling for another 2-3 minutes.
  8. Serve garnished with green onions.
