- Cut 2 pounds of red potatoes into 1-inch chunks and place in a bowl.
- In a separate bowl, mix 3 tablespoons of oil, 1 ounce of ranch seasoning, garlic powder, salt, and pepper.
- Toss the potato chunks in the mixture until evenly coated and let them rest for 5 minutes.
- Preheat your grill to 400°F (200°C) and ensure grates are clean and oiled.
- Transfer seasoned potatoes onto a double layer of aluminum foil, seal tightly.
- Place the foil packet on the preheated grill and cook for 10 minutes, then flip and grill another 10 minutes.
- Carefully open the foil, add cheese, bacon, and parsley, and reseal before grilling for another 2-3 minutes.
