Step-by-Step Instructions for Braised Short Ribs
  1. Preheat your oven to 300°F (150°C). Gather ingredients and equipment, including a heavy-bottomed Dutch oven.
  2. Season beef short ribs generously with salt and pepper. Heat olive oil in the Dutch oven over medium-high heat.
  3. Sear the ribs for 3-4 minutes on each side until brown. Remove and set aside.
  4. In the same pot, add onion, carrots, and celery. Sauté for 5-7 minutes until soft. Stir in minced garlic and cook for an additional minute.
  5. Add a splash of red wine, scraping up browned bits. Add beef broth, tomato paste, thyme, and bay leaves. Bring to a gentle simmer.
