  • 1 box Tubular Pasta any pasta shape, gluten-free if desired
For the Meat Sauce
  • 0.5 lb Ground Beef
  • 0.5 lb Ground Pork substitute ground turkey for a lighter version
  • 2 tbsp Olive Oil for sautéing
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 0.5 cup Red Wine or beef broth if avoiding alcohol
  • 28 oz Crushed Tomatoes
  • 2 tbsp Tomato Paste
  • 1 tsp Cinnamon
  • 0.5 tsp Allspice or Nutmeg
  • 1 leaf Bay Leaf remove before serving
  • salt Salt to taste
  • pepper Pepper to taste
  • 1 tsp Sugar optional, to balance acidity
For the Béchamel Sauce
  • 4 tbsp Butter for richness
  • 4 tbsp Flour
  • 2 cups Milk warm it up for easier mixing
  • 2 Eggs room temperature
  • 0.5 tsp Nutmeg
  • salt Salt
  • 0.5 tsp White Pepper

Method
 

Step‑by‑Step Instructions
  1. Prepare the Pasta: Boil salted water, cook tubular pasta for 2 minutes less than package instructions. Drain, mix with butter and cheese, stir in eggs, and set aside.
  2. Make the Meat Sauce: Sauté onion in olive oil until translucent. Add garlic and ground meats, cook until browned. Pour in red wine, let it simmer. Add tomatoes, tomato paste, spices, and simmer for 30 minutes.
  3. Prepare the Béchamel Sauce: Melt butter, whisk in flour and cook until golden. Gradually add warmed milk, whisking until smooth. Remove from heat, whisk in eggs and seasonings.
  4. Assemble the Pastitsio: Preheat oven to 350°F. Layer half pasta in greased dish, top with meat sauce, remaining pasta, and pour béchamel over top.
  5. Bake to Perfection: Bake uncovered for 45 minutes to 1 hour until golden brown. Let rest for 15-20 minutes before serving.
