  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons pineapple juice

Slaw
  • 4 cups coleslaw mix/shredded cabbage
  • 1 cup drained pineapple tidbits
  • ½ cup chopped macadamia nuts can substitute with toasted almonds or pecans

Method
 

Preparation
  1. In a medium bowl, combine Greek yogurt, Dijon mustard, apple cider vinegar, and pineapple juice. Whisk together until smooth.
  2. In a large mixing bowl, combine coleslaw mix, pineapple tidbits, and macadamia nuts. Stir until evenly mixed.
  3. Pour the dressing over the coleslaw mixture and toss gently until well-coated.
  4. Cover and refrigerate for at least 10-15 minutes to allow flavors to meld.
