Cooking Steps
- Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
- In a medium bowl, whisk together soy sauce, pineapple juice, honey, and rice vinegar until well combined.
- Pat chicken thighs dry and marinate in half of the sauce for at least 15 minutes.
- Arrange marinated chicken on the sheet pan, surrounding it with bell peppers, red onion, and pineapple chunks. Drizzle with olive oil.
- Bake for 25-30 minutes, flipping the chicken halfway through. Brush with reserved sauce in the last 10 minutes.
- Optionally broil for an additional 2-3 minutes for extra caramelization before serving.
