- Remove the tough muscle from each sea scallop, ensuring they are clean. Pat them dry with paper towels.
- In a small mixing bowl, combine butter, minced garlic, lemon juice, zest, and smoked paprika. Mix until well incorporated.
- In a large bowl, add cleaned scallops, drizzle with olive oil, and sprinkle with sea salt and black pepper. Toss to coat.
- Cover the bowl and chill in the refrigerator for about 30 minutes.
- Preheat grill to medium-high heat and clean the grill grates. Lightly oil the grates.
- Grill scallops for about 3 minutes on each side until golden and opaque.
