Step-by-Step Instructions
  1. Prepare the grill by preheating it to medium-high heat, around 400°F.
  2. Tear off four sheets of heavy-duty foil, each approximately 18 inches long.
  3. In a large mixing bowl, combine halved Yukon Gold potatoes, thinly sliced yellow onions, olive oil, minced garlic, kosher salt, black pepper, and freshly chopped rosemary. Stir well.
  4. Divide the potato mixture evenly among the foil sheets and top with chunks of unsalted butter. Fold the foil tightly to form packets.
  5. Grill the packets seam-side up for 20 minutes, then flip and grill for an additional 12 to 15 minutes.
  6. Let the packets rest for 5 minutes before opening carefully. Garnish with fresh parsley and flaky sea salt.
