- Prepare the grill by preheating it to medium-high heat, around 400°F.
- Tear off four sheets of heavy-duty foil, each approximately 18 inches long.
- In a large mixing bowl, combine halved Yukon Gold potatoes, thinly sliced yellow onions, olive oil, minced garlic, kosher salt, black pepper, and freshly chopped rosemary. Stir well.
- Divide the potato mixture evenly among the foil sheets and top with chunks of unsalted butter. Fold the foil tightly to form packets.
- Grill the packets seam-side up for 20 minutes, then flip and grill for an additional 12 to 15 minutes.
- Let the packets rest for 5 minutes before opening carefully. Garnish with fresh parsley and flaky sea salt.
