  1. In a large bowl, whisk together olive oil, jerk seasoning, lime juice, honey, and soy sauce.
  2. Add shrimp to the marinade, gently tossing to coat. Cover and marinate for 15-20 minutes.
  3. Preheat your grill to medium-high heat (375°F to 450°F). Soak wooden skewers in water if using.
  4. Thread the marinated shrimp onto the skewers.
  5. Grill the skewers for approximately 2 minutes on each side, basting with reserved marinade.
  6. Remove from grill and garnish with cilantro or parsley and lime wedges.
