Ingredients

  • 2 tablespoons Olive Oil Can swap for avocado oil.

  • 4 pieces Chicken Breasts Can substitute with chicken thighs, pork, or shrimp.
For the Sweet Corn Salad
  • 2 cups Sweet Corn Use fresh, canned, or frozen.
  • 1 cup Bell Peppers Any type works.
  • 1/2 cup Red Onion Substitute with green onions for a milder taste.
  • 1/4 cup Cilantro Omit if undesirable; can use parsley.
  • 2 tablespoons Lime Juice Lemon juice can be used as an alternative.
Optional Garnish
  • 1/4 cup Cilantro Add right before serving.

Method
 

Marinate the Chicken
  1. In a large mixing bowl, combine hot honey, olive oil, salt, and pepper. Add the chicken breasts and coat them thoroughly in the marinade. Cover and marinate in the refrigerator for at least 30 minutes.
Prepare the Sweet Corn Salad
  1. Grill or boil sweet corn until tender, approximately 5-7 minutes. Cool and cut the kernels off the cob. In a bowl, combine kernels with diced bell peppers, red onion, cilantro, and lime juice.
Preheat the Grill
  1. Preheat grill to medium-high heat (375°F to 400°F). Remove marinated chicken from the fridge and let it reach room temperature for about 10 minutes.
Grill the Chicken
  1. Place marinated chicken on grill grates. Grill for 6-7 minutes per side, or until internal temperature reaches 165°F.
Rest and Slice the Chicken
  1. Remove chicken from the grill and let it rest for 5 minutes. Slice into strips.
Assemble and Garnish
  1. Serve by placing the sweet corn salad on each plate, arranging sliced chicken on top, drizzling with hot honey, and garnishing with cilantro and lime wedges.
