Chimichurri Ingredients
  • 1 cup Fresh Parsley finely chopped
  • 2 cloves Garlic minced
  • ½ cup Olive Oil
  • 1 unit Orange Zest from fresh orange
  • ¼ cup Fresh Orange Juice
  • 1 tablespoon Lemon Juice fresh
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper
Skewer Ingredients
  • 1.5 pounds Halibut cut into small cubes
  • 2 medium Zucchini sliced thinly lengthwise
  • 1 tablespoon Avocado Oil for greasing the grill

Method
 

Preparation
  1. In a medium bowl, whisk together the chimichurri ingredients until well combined.
  2. Toss the halibut cubes in two-thirds of the chimichurri and refrigerate for 30 minutes.
  3. Preheat your grill over medium-high heat for about 10-15 minutes.
  4. Assemble skewers by threading halibut and zucchini, alternating between the two.
  5. Grease the grill with a paper towel dipped in avocado oil.
  6. Grill the skewers for 2 to 2.5 minutes per side.
  7. Drizzle the remaining chimichurri over the grilled skewers before serving.
