Step-by-Step Instructions
  1. Marinate the Beef: Slice sirloin thinly and mix all marinade ingredients in a bowl. Coat beef slices and marinate for at least 1 hour.
  2. Prepare Vegetables: Slice chosen vegetables into ¼" thick pieces, blanch thicker ones, and then place in ice bath.
  3. Sauté Onions and Peppers: Heat olive oil and sauté sliced onions and peppers for about 2 minutes until tender-crisp.
  4. Assemble Roll-Ups: Lay marinated beef flat, add 4–5 vegetable pieces, roll tightly, and secure with toothpicks.
  5. Grill the Roll-Ups: Preheat grill to high heat, cook roll-ups for about 2 minutes on each side until charred.
  6. Rest and Serve: Let roll-ups rest for a couple of minutes before serving with salad or dipping sauce.
