For the Marinade
  • 1/2 cup Soy Sauce Low sodium preferred
  • 1/4 cup Brown Sugar Light or dark varieties work
  • 2 cloves Garlic Freshly minced
  • 1/4 cup Rice Vinegar Can substitute with white wine vinegar
  • 2 tablespoons Sesame Oil High-quality preferred
For the Glazing Sauce
  • 1/4 cup Honey For basting
  • 1/4 cup Ketchup For mixing with honey
Optional Garnishes
  • 2 tablespoons Sesame Seeds For added crunch
  • 2 tablespoons Chopped Green Onions Fresh flavor

Method
 

Preparation
  1. In a medium bowl, whisk together soy sauce, brown sugar, minced garlic, rice vinegar, and sesame oil until well combined.
  2. Pour the marinade over 1½-inch cubes of tri-tip steak in a sealable bag or dish, ensuring they're evenly coated. Seal and refrigerate for at least 4 hours.
  3. Chop the pineapple, red bell pepper, and sweet onion into 1½-inch pieces.
  4. Assemble skewers by alternating steak, pineapple, red bell pepper, and sweet onion.
  5. Mix together the reserved marinade, honey, and ketchup to create the basting sauce.
  6. Preheat your grill to medium heat (around 350°F to 400°F).
  7. Grill the skewers for about 15 minutes, turning every 2-3 minutes. Baste during the last few minutes.
  8. Allow the skewers to rest a few minutes before garnishing with sesame seeds and chopped green onions.
